Galangal Alpina officinarum
A classic tonic, Galangal is a Ginger-like plant which grows about a metre tall. Its reddish-brown rhizomes have typically been used as a cooking spice for their amazingly fruity warmth.
Galangal is native to south east China, but widely cultivated and used as a digestive across China, Indonesia, Thailand and Japan. In India, dried Galangal is used as a spice in curries, and its steam-distilled oil and extracted oleoresins in perfumery.
